Hybrid Foods: The Rise of Mixed Plant-Animal Products

Özet

Hybrid foods, combining animal- and plant–based ingredients in one formulation, are increasingly viewed as a practical bridge between conventional and fully plant–based diets. While plant-only and animal-based foods have been widely reviewed, hybrid systems remain insufficiently synthesized. This review critically evaluates recent studies to provide an interdisciplinary perspective on hybrid food design. Major categories include meat–plant blends, dairy–plant systems, seafood–plant formulations, and emerging bakery applications. Technological aspects are examined through matrix behavior, processing challenges, protein interactions, extrusion, fermentation, emulsification, and crosslinking strategies affecting texture, stability, digestibility, and sensory quality. Nutritional implications are discussed in terms of protein complementarity, improved fat profiles, micronutrient bioavailability, and plant anti-nutritional factors. Environmental evidence from life cycle assessment studies indicates reduced greenhouse gas emissions, land and water use, together with circular economy opportunities through by-product valorization. Consumer perspectives are analyzed through acceptance, willingness-to-pay, food neophobia, and the effects of labeling and information framing. Market trends, regulatory issues, and commercialization pathways are also considered. Key research gaps include the need for standardized definitions, long-term clinical validation, culturally diverse consumer studies, and integrated techno-environmental assessments. As a consequence, hybrid foods represent a scientifically grounded and strategically relevant pathway for sustainable protein transitions while maintaining sensory familiarity and nutritional adequacy.
