Özet

The objective of this study is to investigate the phenotypic and biochemical parameters of selected Zinzik pomegranate cultivars. The fruit weight, juice yield, 100 aril weight and aril percentage were studied and found to range between 237- 329 g, 38.14-42.22%, 39.21-44.36 g, and 52.27-57.48%, respectively. Soluble Solid Content (SSC), titratable acidity, maturity index and vitamin C varied from 17.1-19.3%, 0.89-1.07%, 17.3 21.2, and 13.6-17.9 mg per 100 g, respectively. All Zivzik accessions had a sour-sweet taste according to the maturity index. The total phenolic and total anthocyanin content ranged from 89.2-103.6 mg gallic acid equivalents (GAE) per 100 g and 16.3-21.7 mg cyanidine-3-glucoside equivalent per 100 g fresh weight basis.
