Özet

Chemical composition, rennet clotting time and major minerals of milk were determined in Awassi sheep at 4 week intervals throughout lactation. The average gross composition (g/100g milk) of the milk was as follows: total solids 17.07, protein 5.19, fat 5.82, lactose 5.12, solids non-fat 11.25; acidity and rennet clotting time were found as 8.05 SH and 6.24 min, respectively. Mineral contents (mg/100g milk) were: Ca 171.69, P 120.04, Na 74.97, K 97.04 and Mg 19.89. All constituents studied, except acidity and K content of the milk, were significantly (p<0.01) dependent on the stage of lactation. Also correlations between studied properties of the milk were reported.
