Özet
The aim of the
study is
to determine the attitudes and behaviors towards the consumers' fish
consumption, and to analyze the factors affecting the consumption of fish meat.
The primary data used in the study was obtained from face to face survey
technique conducted with 384 households residing in Erzurum. Factor Analysis to determine the main
factors affecting the consumption based on the fish meat attributes and K-means Cluster Analysis to constitute the homogenous segments related to their
consumption frequencies were used. According to
research results; the consumers consuming the fish meat at low-level (C1)
demanded the native fish, and believed that fish was a very good product for
invitations, and considered to be given an important contribution to the
region's economy along with confidence to the fish meat. On the other hand, the
consumers consuming fish meat at middle-level (C2) demanded the native fish,
and believed that the fish was a very good product for invitations, and gave a
much more importance by being a health and nutritional food. The consumers
consuming fish meat at high-level (C3) demanded the native fish, and believed
that the fish was a very good product for diet, and gave a much more importance
by being a health and nutritional food, and preferred much more to be compatible with the sensory quality perceptions
